Ingredients
2 medium sized Zucchini
1 clove of garlic
1 small yellow or red onion
1 egg
1 tsp fresh or dried oregano
3 tsps grated parmesan (2 tsps for in the fritter batter an 1 tsps for garnish)
3-4 tbsps flour
oregano leaves for garnish
Yields approximately 15-20 fritters
