Ingredients
3 medium sized eggplants
1 cup of seasoned or plain breadcrumbs
1 cup of flour
1 egg
1/2 tsp salt
Sauce
1 clove of garlic
1 small red onion
2 cups tomato puree
1 tsp fresh or dried oregano
2 tbs olive oil
1/4 tsp salt
1/8 tsp pepper
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
Topping
1/2 tsp oregano leaves for garnish
1 tsp olive oil for drizzling on top
