Lentil Soup Classic- Quick And Easy Recipe - SuperSimpleKitchen





A quick and easy classic lentil soup recipe. Hearty lentil soup

cooked in a tomato base, paired with vegetables and seasoned with bay leaf.

Garnished with a dollop of greek yogurt and a dash of cayenne pepper this

thick, rich lentil soup is comforting, filling and nutritious. It's also  flavorful,

delicious, low calorie , heart healthy and low fat. It can be served for

lunch, brunch or dinner or had as a snack. It's absolutely perfect to warm up

with on a chilly night!

Ingredients



2 cups of lentils

1 cup of sliced carrots

1 cup of sliced celery

1 red onion diced

1 clove of garlic diced

2 bay leaves

2 cups of tomato puree

8 tbs of olive oil

1 tsp salt

Dash of Black Pepper

1 tablespoon of Greek Yogurt (optional)

Dash of Cayenne Pepper(optional)

4 -6 cups of Water (Enough to cover soup mix by about 2 inches)
