Napoleons / Mille Feuille Recipe



Flaky layers of golden puff pastry layered with a luscious rich pastry cream flavored with almond liqueur. This napoleon also known as mille-feuille recipe is easy to make and simply heavenly. Toasted almonds garnish the flaky topping making these napoleons a fantastic taste experience!

Ingredients

Pastry Cream

4 cups milk
4 eggs
4 tbsps butter
1 1/4 cups sugar
1 tsp salt
8 heaping tbps flour
1 tsp vanilla
1 tsp almond liqueur

Puff Pastry

2 cups flour
1 tsp salt
1 cup butter
1/2 cup ice water

Beurrage

1/2 stick butter
1 tsp salt

Topping

1/4 cup blanched roasted almonds
4 tbsps powdered sugar
1/4 cup additional powdered sugar
1-2 tsps unsweetened cocoa powder
some melted chocolate or chocolate drizzle (optional)

Yields 14 2 x 5 napoleons




Homemade Traditional Easy Baklava Filo Dough




Commercially prepared processed Filo (Phyllo) Dough is a fairly recent development. Filo dough traditionally was made and hand rolled at home. There are many Yiayia's and home cooks that still consider it an anathema to use a commercially prepared filo dough in the areas where recipes using filo dough's originate.. They won't let it near their kitchen. If you haven't rolled out the filo dough yourself it's not a traditional recipe. This recipe makes a fantastic homemade filo (phyllo) dough. It's both easy to make and easy to handle. It can be used for Baklava and other (sweet) pastries that call for the use of Filo (phyllo) dough.There is also another filo dough recipe on my channel that you can use for savory (salty) recipes that call for the use of filo dough. Your  finished product will come out so much better using a homemade filo dough. The difference is remarkable. So if your going to go to the trouble of making something, go all the way. Just a few extra minutes of time to make your filo dough will make a huge difference and turn your finished product from something average into something extraordinary!

2 cups of flour
1 1/4 cups of milk
2 tbsps olive oil
1/2 tsp salt

Awesome Baklava! Super Simple Recipe




 A delightful change of pace from the ordinary Baklava. This Baklava is made with a homemade filo dough ,a pistachio/walnut filling , and drenched with a luscious honey/lemon syrup . It's simply fantastic! This Baklava is super simple to make and it's lower in calories than the average baklava.

 Ingredients

 Syrup
 2 cups water
2 tbsps lemon juice
 2 tbsps honey
1 1/4 cups of sugar
 Dash of cinnamon

 Filling
 1 cup pistachio nuts
 1 cup walnuts
3 tbsps sugar
2 tbsps cinnamon
 2 tbsps butter

 Filo Dough
 2 cups of flour
1 1/4 cups of milk
2 tbsps olive oil
1/2 tsp salt

 Chill thoroughly before serving. Yields approximately 16-20 3 x 3 Baklavas

 

Pastry Cream





A nice rich custard vanilla pastry cream. Great for tarts,pastries,cakes,pies and everywhere else you might want to use a pastry cream. This is a non corn flour based pastry cream. Easy to make and super delicious. For those of you avoiding corn products you'll love it, for those who haven't given it much thought,consider it. It comes out richer,smoother, tastier and is a healthier option.

Ingredients

3 tbsps flour
2 eggs
2 tbsps butter
3/4 cup sugar
dash salt
1 tsp vanilla
2 cups cold milk

Fruit Tart Fresh Loquat




A super simple,super delicious fresh fruit tart. Filled  with vanilla pastry creme,topped with fresh loquats and garnished with mint. Really easy to make and a fabulous taste sensation!
Loquats are a delicious little fruit that flavor wise resemble a cross between apricot and mango. They're also loaded with vitamin A and antioxidants. If you've never had them, give them a try.

Shortcrust Pastry

Pastry Creme
2 cups of cold milk
2 1/2 tbsps flour
1 egg
4 tsps sugar
dash of salt
dash of vanilla
4 tablespoons powdered sugar

Topping
Fresh loquats (1 per tart)
Fresh mint leaves (garnish)

Yields approximately 12-15 tarts depending on the size made.


Super Simple Fruit Glaze



A delicious non -cornstarch based fruit glaze that will add shimmer to your fruit,enhance it's color and prevent it from discoloring. Super simple to make. Perfect for pies,tarts and pastries.

Ingredients

1 1/2 cups of water
1 tsp lemon juice
1 cup of sugar
dash of lemon zest

Super Simple Lemon Curd




A super simple easy to make delicious lemon curd. With this method you get a nice silky smooth ,creamy lemon curd. Fantastic in pies,in pastry on scones and pancakes

7 ounces of sugar
7 ounces of lemon juice
3 whole eggs + 2 egg yolks
6 tablespoons of butter

Shortcrust Pastry Super Simple




A super simple shortcrust pastry dough that's easy to make and handle. This dough rolls out easily without cracking and is very manageable as far as handling goes.

Ingredients

2 cups of flour
1 cup of butter
salt (approximately 1 teaspoon)
1/2 cup of water


Strawberry Lemon Curd Tarts




Shortcrust pastry tarts filled with delicious lemon curd, topped with fresh strawberries and pistachio nuts. Easy to make and absolutely fantastic! The finishing glaze on the strawberries is non-cornstarch based making for a wonderful experience of taste and texture,. it's also healthier for you.

Ingredients

Shortcrust pastry

2 cups of flour
1 cup of butter
salt (approximately 1 teaspoon)
1/2 cup of water

Lemon Curd

7 ounces of sugar
7 ounces of lemon juice
3 whole eggs + 2 egg yolks
6 tablespoons of butter

Topping

1 pint to 1 quart of strawberries

Fruit Glaze
1 1/2 cups of water
1 tsp lemon juice
1 cup of sugar
dash of lemon zest

Yields approximately 15 tarts depending on the size of the tart shells you are using.
