Moussaka Recipe Classic Greek

 








A classic greek style Moussaka recipe that will bring Greece right to your table with tender layers of eggplant, potatoes, and savory meat sauce all topped with a creamy bechamel. This is comfort food at it’s best. 




Ingredients
4 medium sized eggplants
4 or 5 large potatoes ( depending on size)
3 plum or vine ripened tomatoes
1 box or can of tomato puree
2 small red onions
4 medium sized cloves of garlic
1 1/2 pounds of ground beef
2 bay leaves
1 tsp cinnamon
salt to taste
1 tsp black pepper
1 tsp red pepper flakes
Olive oil

Bechamel
Olive oil
1 tbs butter
1/2 cup white flour
1/2 tsp appx salt to taste
1/2 tsp black pepper
1/2 tsp ground nutmeg






Vasilopita Greek New Years Cake Sweetbread


Vasilopita is a greek sweetbread cake that is traditionally made the night before and served on new years day in Greece. The sweetbread is flavored with cinnamon, and orange zest giving it a light citrusy flavor. It’s often flavored with mastic gum as well, a natural gum collected from the mastic trees on the island of Chios, which lends a wonderful and unique flavor to this delicious sweetbread. 



The vasilopita cake is baked with a coin hidden within it. When the cake is cut and served on new years day whoever gets the slice with the coin in it is said to have good luck for the year! It’s a wonderful and fun tradition. 

There are many legends regarding the history of this tradition. One is that St.Basil wanted to allow people their dignity when he was giving charity to the poor  so he baked bread with coins hidden within the loaves and then gifted the bread. 

New years is not the only time this delicious sweetbread is made in Greece. It’s also baked on easter ,minus the lucky coin, and throughout the year as a simple braided sweetbread which is called tsoureki.

Ingredients

Chicken Preparation

1 large chicken cutlet cut into cubes
1 clove of garlic
1 tbsp fresh parsley
3-4 tbsps fresh lemon juice
1/2 tbsp salt
2-3 tbsps olive oil
dash of black pepper

For Filling Pitas

1-2 small tomatoes sliced
1 small red onion thinly sliced
tzatiki sauce

You'll need 4 flatbread Pita Wraps and Tzatiki sauce

Optional:Some fresh parsley for garnish

Yields 4 Chicken Souvlakia
